Also items were disorganized and scattered. *Ensure items are organized and stored covered within 7 days; 03/14/16; to reduce product contamination.-Observed items improperly stored and disorganized in the walk in cooler. Eggs were stored on top of a cooked ground beef/cheese mixture. Shrimp were stored above bread; etc.*Ensure items are stored properly separated (breads and uncooked items above fish above red meat above chicken and eggs) to reduce product contamination.*Ensure items are properly stored within 7 days; 03/14/16.
General Comments that relate to this Inspection Notes: No food items were activly being prepared during the inspection. Inspector observed items being cooled properly in the walk in cooler and the blast chiller. -Handsinks were clean and stocked.-Area was clean and organized.-Dry storage was clean and organized. Observed food items being stored at least 6 inches off the floor.-No signs of pests or vermin.-Observed proper chemical storage.-Walk in freezer at 0F. All items frozen.-Walk in cooler at 40F. Rice 36F; Beans 37F; steak 28F; tomato salsa 37F.-Hot holding chicken at 138F; au jus 185F.-Dishwasher at 185F. Good.-3 Compartment sink was clean. Not being used during the inspection.-Ice machine was clean. Scoop stored properly.-Facility turned in a list of CFPM's for this facility to WCHD. Inspector will do a CFPM follow up to list CFPM's.Per manager no individuals have taken the CFPM exam and failed the exam within the past year.

General Comments that relate to this Inspection All items from opening inspection have been corrected with the exception of the following: - Cleaning of floors in dry storage area. - Standing water under ice machine. This area needs to be deep cleaned and monitored to ensure this is not a long term issue. - Label dials on dishwasher. (Labels on order)

Re-label wash and rinse dials at dishwasher.Repair leak at prep sink.Repair gasket at stand up cooler.Add thermometer to stand up cooler.General cleaning- Floors; walls; inside and outside of coolers and equipment; behind and under equipment; etc.Repair leak at handsink and put a lid on the soap dispenser.Walk in 18 - Repair door so it opens easily. Repair leak in the refrigeration line.Repair leak at hot wash area hand sink.Repair leak under 3 compartment hot wash sink.Repair/replace ceiling tile above ice machine and above hot wash area.Additional list of CFPM's for entire facility and those that failed CFPM exam will be documented on the main kitchen inspection report.
