Observed unlabeled bag of cooked chicken in 2-door cooler. Manager was unsure when chicken was put there. Food was voluntarily discarded during inspection. Also observed unlabeled container of cooked chicken in cookline cooler. Per manager, this was stored here last night after dinner rush. Due to food being stored here less than 24 hrs, food was not discarded. Manager date labeled chicken with yesterdays date. Ensure all RTE potentially hazardous foods are date labeled and used by or discarded after 7 days.
Observed employee incorrectly wash hands. Employee turned off faucet with barehands, re-contaminating their hands. Ensure a disposable paper towel or other clean barrier is used to turn off the faucet. Discussed proper handwashing steps with manager and re-educating employees.
Observed kitchen cook without a hair restraint. Ensure employees working with food have effective hair restraints, such as a hat or hair net.
Facility does not have Quat Ammonium test strips for the 3-compartment sink. Provide test strips.
Observed low concentration of sanitizer in dish washing machine (~10 ppm). Manager mentioned this was a repeating problem from last inspection. Contact EcoLab to ensure dish washing machine sanitizes at a concentration of 50-100 ppm. A re-inspection will be conducted after 10 days to ensure the machine is working correctly.
