- Found 4 gallons of milk, chai mix in small prep cooler under the front counter at 49-50F. Maintain cold foods at 41F or below. This cooler was not working and must be repaired. Repairman was contacted during the inspection, the unit was unplugged and removed from service, and all food in this unit was disposed of at the time of the inspection (by manager). Contact Kim at TCHD for a re-inspection when this unit has been repaired and maintaining food at 41F or below.
- The floor under and around the equipment and the front counter had a build up of debris. Clean the floor. Corrected.
- Repair the small gaps in the flooring in the south storage area.

- Observed untreated wood on the shelving in the dry storage room. Paint or seal. Observed a piece of trim missing from around the office wall in the back dry storage area. Replace.
- The facility did not have any test strips for their sanitizer. Ensure test strips are provided and used to test the sanitizer concentration.
- Observed debris accumulation in cooling units at facility. Clean refrigerators and freezers inside and out, and ensure routine cleaning. Observed debris accumulation on door to dry storage room. Clean and ensure routine cleaning.
- Observed coving missing along floor/wall juncture in dry storage area. Install coving.
- Facility has one certified FSSMC. Per the owner, this manager is on vacation for one month. I recommended to the owner that another person become FSSMC certified so that there is always a full time employee available to work.
