- Observed employee grabbing lids to put on containers, then assemble sausage biscuits and not wash hands between tasks. Wash the hands whenever one changes from one task to another such as immediately before engaging in food preparation, working with exposed foods, clean equipment and utensils and unwrapped single service and single use articles.
- Observed container soaking in the front hand sink. Hand sinks are to be used only for washing of hands.
- Observed employee not using gloves when assebling sausage biscuits. SOP of McDonald's is to wash hands, apply sanitizer then use clear gloves when assembling ready to eats. When working with raw meats wash hands, apply sanitizer then use blue gloves.
- Observed all syurps, milks, mcflurry toppings, and side salads all missing date labels. SOP of McDonald's states all items made must have date labels. Date mark refrigerated, ready-to-eat food that is frequently unwrapped or dispensed using an acceptable method.
- Observed three compartment sink hot water only reached 106F after being runned for 2 mins. Three compartment sink and mop sink must reach 110F and hand sink must be at 100F.
- Observed backflow preventer not working at the mops sink. Observed three compartment sink disposal pipe not properly disposing in the floor drain. Investigate and repair backflow preventer and disposal piping.
- Observed condiment bins, drawers holding wrappings, cup holders, fryers, grill, all dispensing units (syrup, milk, soda, coffee) needing to be cleaned. Clean and sanitize all equipment to be used for food storage, prep, or service.
- Observed no food manager certificate present. Ch 13, Art IV, section 13-112(a)(1) and (2) CFM. A food establishment shall employ at least one person assigned to each shift of twelve (12) or fewer hours who: (1) Meets the "person in charge" definition found in the Texas Food Establishment Rules; and (2) Has a valid and current food manager's certificate issued by the director. Manager must show proof of Food Manager Certification. Once a valid Food Manager's certification is obtained, proceed to 1901 S. Alamo (DBSC) Health Department desk to purchase ($15.45) a Metro Health ID.
