Hard wood used for smoking being stored outside the building with no protection. Discussed with the own who stated he will get an outdoor storage bin to store the wood in. Provide wood for smoking to be protected.

The edge of the counter top for the prep table is not sealed. Paint or seal the edge of the prep counter.
- Wiping cloths clean, used properly, stored
Numerous wiping cloths seen stored on the counter tops or hanging on the sinks. Corrected wiping cloth solution was made and wiping cloths where placed into the bucket. Moist cloths or sponges used for cleaning non-food-contact surfaces of equipment such as counters, dining table tops and shelves shall be stored in the sanitizing solution between uses.
- Single service items properly stored, handled, dispensed
Plastic forks and spoons stored in the box they came in were multiple directions. Provide a container which the plastic forks and spoons can be stored in with the handles presented to the worker. Single-service knives, forks and spoons shall be presented with the handle of the utensil towards the user unless they are pre-wrapped or pre-packaged.
- Plumbing installed and maintained
3-compartment sink is leaking. Repair or replace the leaking fixture. Plumbing shall be sized, installed, and maintained in accordance with applicable provisions of the Illinois State Plumbing Code.
- Critical: Toxic items labeled and used properly
Spray bottles being stored above the sink next to the back door were not labeled. Label spray bottles with what they contain. Corrected the contents of the bottles were dumped. Small working containers of bulk cleaning agents shall be individually labeled for easy identification of contents.

Only packaged food and packaged single use items may be stored in the storage room with the washer and dryer.
New hand sink on wall with hood will overflow out the air gap when the water is left on for 30-40 seconds. Clean grease trap or remove baffles to allow better water flow.
Per receipt, new gaskets have been ordered for the walk in cooler and walk in freezer.
Final approval has been given to operate under the guidelines of Chapter 10, Food Safety, of the Peoria County Code.
