JCDH 2.2 Provide readily available documentation of food safety training for all employees at all hours of operation.
3-501.14(A) Cool PHF from 135F to 41F or lower within 6 hours, and from 135F to 70F or below within the first 2 hours of cooling time. PHF > 41F in cold holding unit due to improper cooling procedure following cooking.//Observed grill chicken cooked at 9:00am stacked in metal pan at temperatures of 78 F -110 F covered with plastic in WI cooler.//COS - grill chicken was reheated to 165 F and cooled again.
NOV # 2E51001663 has been abated. There was no pasta stored in WI cooler at time of inspection. EHS did observe other items stored in cooler (boiled eggs -39 F, ham and turkey-40 F). While performing inspection, EHS notice trash compactor used by Zoes and other FSEs in mall was leaking a very pungent liquid from it. EHS spoke with property manager (JoAnn) about repairing compactor. JoAnn stated that she would call BFI to get compactor repaired. EHS will follow up with property manager.
