4-101.11 Cease the use of food contact surfaces which alter color, odor, or taste of food, or which allow migration of substances. Metal band basting brushes are corroded.
3-501.15 Place cooling food on top shelf of cooler or freezer. Chicken, fish, & poatoes cooled on a speed rack, located next to the door.
4-501.116 Provide test strips with color chart for chlorine sanitizer.
4-901.11 Allow utensils to air dry before stacking. Wet stacking of clean food pans on the drying rack.

6-501.12 Clean facilities (floors, walls, ceilings, fixtures, etc.) as often as necessary to maintain cleanliness. Take measures to remove dusty build up from ceiling tile and vent at entrance into walk in cooler and throughout facility as necessary. Clean floors under soda fountain machine.
Clean wall behind three compartment sink and recaulk to remove black build up.
6-303.11 Provide at least 50 foot candles of light in food prep and ware washing areas. Area at large oven at 30 foot candles. This area is a food prep area.

Additional handwashing sink may be required at make line salad cooler and grill area. Employees were observed using handwashing sink however the "ease of access" is not available. Facility is in the process of remodeling/renovating.
