6-501.16 Store mops so that they may be air-dried without contaminating walls, equipment, or supplies.

3-501.14 Cool potentially hazardous food from 135 F to 41 F or lower within 6 hours, and from 135 F to 70 F or below within the first 2 hours of cooling time. Chicken breasts 48 F to 60F cooling in the make cooler (top side). Chicken was removed from the oven at 9:30 am. & cooled on sheet pans for several hours (at room temperature,) before transfering to the make cooler.
Chicken was voluntarily discarded at this time.
