4-601.11 Clean shelves and bottoms of refrigerator and freezer.
4-602.13 Clean non food contact surfaces as often as necessary to prevent accumulation of residue.
Clean the sides of the fryer and the grills.
5-501.114 Provide drain plug for dumpster.
The dumpster does not have a drain plug.
6-202.15 Protect outer openings from entry of insects and rodents.
The rear exit security door needs to be screened if it is going to remain open for ventilation.

Clean the wall vent adjacent to the chest freezer.

I discussed the Alabama Seafood Labeling Law with Lora Trice, the owner. According to Mrs. Trice the FSE does not serve seafood products.

2-402.11 Wear hair restraints that are designed and worn to effectively keep hair from contacting exposed food, equipment, utensils, linens, and unwrapped single service/single use articles.
Foodworker did not have a hair restraint.
4-501.12 Surfaces such as cuting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.
Cutting board by pit needs resurface.

4-502.11 Calibrate thermometers according to manufacturer specifications as often as necessary to ensure accuracy.
Metal stemmed food thermometer for taking food temperatures was not accurate. COS
6-501.12 Clean facilities (floors, walls, ceilings, fixtures, etc.) as often as necessary to maintain cleanliness.
Clean the ceiling tiles in needed areas in the kitchen.
6-501.14 Clean ventilation hood filters.
