I want to spend four or five days in Cajun country in the coming month. I would like to know what the best spots beyond New Orleans are, and where I am most likely to hear French and be immersed in the Cajun culture are.

Also, what are my options for touring the bayous? I will probably be going as a single person. And what are your favorite LOCAL CUISINE restaurants, especially outside of NO? Thank you.

New Orleans is not Cajun country. The Cajuns are in SW Louisiana, around Lafayette.

Yeah, are you going to be actually in cajun country? (towns straddling Hwy 90 and SW Louisiana)

Plan it for late April and attend Festival International. You wont be disappointed.

Festival International is VERY NICE. This year it will be April 23-27. Location Lafayette, LA which is Cajun Country along with the surrounding areas.

Yes, I will be. I don't know whether NO is part of Cajun Country, but from what I know, Cajun Country is centered upon Lafayette.

New Orleans is not a part of CC, and yes Lafayette is the hub. Breaux Bridge is a local favorite town, likely to hear French depending on where you go.

Thank you for the clarification. Any other suggestions?

My interests are pretty much everything other than nightlife. Good spots for photos, historical sites, museums, tours of the swamps (especially in those hydrofoil or hoverboats or whatever they use down there, I've seen them used in MN for wetlands research purposes), good, not spendy places to eat popular with the locals, churches / monasteries, walkable downtowns, etc.
