Heed these wise words. You may think you have flown under the redar with unpermitted changes, but if they are discovered by your insurance company or lender, it may be an expensive lesson. Especially, if an insurance claim is denied after investigating and then discovering anything unpermitted.

They don't deny because "anything" is unpermitted. It has to be relevant to the claim.

The insurance adjuster & the claimant homeowner may have entirely different ideas of what unpermited work is relevant to the claim.

Insurance adjuster would have a hard time pinning some drywall in the garage on a roof leak on the other side of the house, or an electrical fire in the kitchen. It's just not how it works.
