I'm stuck for some new ideas as I have burned out on spatchcocking and pan cooking that while faster has some limitations for ingredients. Please, inspire me!
You can cut that chicken into wings, thighs, drums… And breast and then cook what you want
We just baked a whole chicken… I bring the legs for lunches is at work
In the breast, we put in a food processor for chicken salad, and then put in a tortilla wrap and rolled it up… It was pretty good

We gave up on cooking whole chickens, because the cost is more than a cooked rotisserie chicken from Costco. $4.99 cooked and tasty vs $11.99 fresh and raw at Safeway. We'll still buy frozen breasts or a package of thighs on sale. In summer I like to grill teriyaki chicken, or cook the thighs low and slow in the smoker.
I love the Ina Garten roasted chicken recipe ... the bird roasts in a bed of carrots, onion, and fennel. Super easy! And like gemstone1 mentioned, I use the carcass to make stock.
Chicken with 40 cloves of garlic. I can look up the recipe if you want, but basically sliced onions and celery in the bottom of the dutch oven, a chicken, a little white wine and fresh herbs and 40 cloves of garlic, cover and cook. That's pretty close. Pure nirvana, cooked garlic spreads like butter on your chicken or bread, nice broth in the bottom.
Do you have access to fresh citrus? Cook the chicken with the juice of lemons, limes or oranges, or a combo of all. Put wedges of the fruit in the cavities, also season with garlic powder, s/p. Roast in oven at 350F, baste frequently, tender, moist & delicious. It’s my favorite way to cook a chicken.
On Amazon search for "Rotisserie Chicken Cookbook"--there are several to choose from and you can buy a used copy for $1 plus shipping. Or do the same search at your library and read a copy free!
We always save the bones and make soup stock once a month, so healthy and flavorful. That also can be used so many ways.
I like cooking a whole chicken together with seasonings & vegetables in an oven cooking bag.
