What to do with a can of beets ? (ingredients, dressing, taste)

Put them in a jar with vinegar, a couple de-seeded hot peppers, a couple of garlics, maybe a sprig of thyme, and you've got your pickled beets after a couple days.
TOMATO FREE SAUCE (especially if you are achy and need to stay away from nightshade vegetable b/c of arthritis
I usually use a 2 to 1 mixture of cooked carrots and beets blended in a food processor as a tomato sauce substitute.. Oddly it tastes like tomato sause when poured over food that is baked in the oven (minus the acid)
For example 2 cups cooked carrot plus 1 cup of cooked beets, and the spices you like.. or check out the many on-line recipes for this delightful and surprising mix.
My favorite is to make a lasagne with this carrot/beet mix.
You won't believe how good it is.. it defies logic!
Okay I was going to be snarky and say throw them in the trash, but this sounds good. I was traumatized by some beets when I was a young child. Maybe I should give them another chance? Aren't they a super food?

Me and my siblings used to hate peas.Ya know the canned ones. We would put our napkin on our lap and hide the peas in there then throw them out. Or the good old throw them to th dog under the table
I love beets of any shape or form. If I have canned beets, which I don't usually buy, I would warm them up in the microwave, pat of butter and salt and pepper. YUMMY!!!
I'll never forget the time my husband had a LOT of fresh beets. The next time he went to the bathroom, he thought he was dying!!
