It has likely been discussed before. I just went half way through a documentary on umami, and now am obliged to post, sorry, if it's a double post and you all already know.

Here's a little article on umami, aka Taste number five (they have to hide it somehow, don't they?)

Beware of Umami - "Taste No. 5" - it's just another name for MSG

MSG, or mono sodium glutamate, is artificial umami. Article I rfer to is quite "political" on the subject, but documentary I am watching is not.

1. Apparently, there was a special marines commando, that went into just bombarded Nagasaki, to reach MSG factory and retain all the "know how" documentation and bring it to the USA
2. MSG develops food addiction
3. MSG masks spoiled or sub-quality product taste. As a result, it is massively used in industrial food production, for exactly those purposes - to sell sub-standard food as great testing and fresh.
4. It is proven to develop sight problems
5. It influences Asians less than whites or blacks.

Umami is MSG (mono-sodium-glutamate). Well, it isn't really. MSG, is a tastant, just like table [COLOR=#e0e060 !important][COLOR=#E0E060 ! important]salt[/color][/color] (NaCl) is a tastant. You wouldn't eat salt in itself as it really wouldn't taste very nice, but you season your food with it, and it can [COLOR=#e0e060 !important][COLOR=#E0E060 ! important]taste [COLOR=#E0E060 ! important]great[/color][/color][/color]. This is similar to small amounts of MSG in food, which gives the taste of umami.
Umami, as you probably already know is the 5th taste.

MSG is in everything, from fast food to food at your local supermarket. First and foremost It's an additive to make food more addictive, so that you eat more. More food bought, more profit made.

The FDA sets no limit to the amount of MSG that can be added to your food. Hence the amount added has increased over the past 50 years.

MSG has been injected into new born lab rats, specifically to induce obesity. More importantly for diabetes study. It does this because it triples the amount of insulin produced by the pancreas. (insulin has steroid hormone characteristics)

Any wonder why obesity and diabetes have increased exponentially over the past 50 years?

Also, MSG is an excitotoxin. Glutamates, destroy nerve cells. Which is a major cause of alzheimers. Any wonder why there is an exponential increase in the development of the disease? By 2050, the US may have 14.3 million cases of the degenerative disease.

MSG is also proven to cause atherosclerosis, which is the hardening and fusing of major arteries, with the accumulation of fats. Which can bring on sudden cardiac arrest.

All in all, I would say there's some pretty strong evidence as to MSG being nasty stuff indeed.
But hey, who cares if the people are progressively more ill and dying. As long as someone's making a lot of money in the process, that's a job well done.

Umami is a sensation of taste. Not MSG. So everything stated is meaningless.

Not only that, but MSG has fallen out of favor for the most part - it's not added in any Chinese take-outs in this area anymore. It used to be, and then people were asking for their meal without it, and that happened so often that the take-out joints started printing "NO MSG!" on their menus and stopped adding it - and eventually they didn't even bother putting it on their menus that they weren't adding it anymore. These days, that would be like saying "No Human Flesh" or "No telephone wires." It's a given. There's no more MSG added to any foods in chinese take-outs in our area, and everyone knows it, so they don't have to waste space on their menu advertising it

Unseasoned canned goods have no MSG in them. Produce has no MSG in it. Meat department meats have no MSG in them. Many soups and prepared meat and vegetable stocks no longer have MSG in them; some have this printed on their labels, some don't. Most sweet foods have no MSG in them.

LOTS OF FOODS have no MSG in them. So I don't know where the OP gets the idea that MSG is in everything. MSG is only in a pretty limited variety of things.
