Bactericidal treatment shall consist of exposure of all dish and utensil surfaces to a rinse of clean water at a temperature of not less than 180F. NO SANITIZER AVAILABLE FOR THE LOW TEMPERATURE DISHMACHINE. UNIT TAGGED BY CDPH. MUST PROVIDE CHLORINE SANITIZER FOR THE DISHMACHINE. DISHMACHINE WAS NOT IS USE AT TIME OF INSPECTION. PREMISES HAS A 3 COMPARTMENT SINK TO WASH AND SANITIZE UTENSILS. NO CITATION ISSUED. CRITICAL VIOLATION 7-38-030.
All food should be properly protected from contamination during storage, preparation, display, service, and transportation. FOOD (ICE) NOT PORTECTED DURING STORAGE INSIDE OF THE ICE MACHINE. THE EXPOSED HANDSINK IN THE PREP AREA IS SLOW DRAINING. MUST REPAIR. THE 1 COMPARTMENT SINK BEHIND THE EAST BAR HAS STANDING WATER IN IT AND IS BACKED UP. MUST REPAIR. THE WEST EXPOSED HANDSINK BEHIND THE MAIN BAR IS LEAKING WATER FROM THE DRAIN LINE. MUST REPAIR LEAK. THE MIDDLE 1 COMPARTMENT SINK AT THE MAIN BAR LACKS HOT WATER. MUST REPAIR. SEVERAL OF THE WOMEN'S AND MEN'S TOILETS ARE OUT OF ORDER, ALONG WITH ONE OF THE URINALS. MUST REPAIR.
