The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. EXCESSIVE GREASE BUILD UP AND DEBRIS UNDER COOKING EQUIPMENT, MUST CLEAN FLOORS, UNDER, BETWEEN EQUIPMENT AT CORNERS AND ALONG WALLS THRU-OUT PREP AREAS, DISH WASHING AREA AND WASHROOM.
The walls and ceilings shall be in good repair and easily cleaned. MUST REPAIR WALLS AT REAR DISH WASHING AREA AND WASHROOM AND REPAINT; ALSO CLEAN WALLS BEHIND COOKING EQUIPMENT AT FRONT KITCHEN. CLEAN HOOD AND FILTERS ABOVE COOKING EQUIPMENT AND REPLACE DAMAGED CEILING PANELS IN WASHROOM AND AT REAR DISH WASHING AREA.
INSTRUCTED TO REMOVE UNNECESSARY ARTICLES THRU-OUT REAT PREP AREA AND DISH WASHING AREA, CLEAN AND ORGANIZE TO PREVENT PEST HARBORAGE.
All employees shall be required to use effective hair restraints to confine hair.
MUST PROPERLY STORED ICE SCOOPS AND CLEANING TOWELS.
