MUST CLEAN ENTIRE HOOD AREA, REMOVE ALL GREASE BUILT-UP, CLEAN EXTERIOR OF ALL BULK STORAGE CONTAINERS STORED INSIDE WALK-IN COOLER, AND CLEAN WHITE INTERIOR SHELVES INSIDE COOLERS
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST CLEAN FLOORS THRU-OUT KITCHEN AREA, OUTSIDE GROUND AREA, AND INSIDE WALK-IN COOLER

Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. MUST PROVIDE LIGHT SHIELDS ON LIGHT IN WALK-IN FREEZER
