Sanitization methods - hot water, chemical Observation: High heat sanitizing dish machine in the bakery was not sanitizing correctly. Person in charge turned on the booster heater and machine came up to proper temperature.
Cooling foods are stored properly Observation: Prepared tabbouleh in the walk in cold prep cooler was cooling with a tight wrapped cover. Person in charge removed cover.
Test kit provided and used to measure sanitizing solution concentration Observation: No quat test strips available to test concentration of sanitizer.

Physical facilities maintained clean: Cleaning frequency, restrictions, and methods Observed wall where the meat slicer is stored next to had food residue on the wall, at the adjacent paper towel dispenser, and at the white pipe plumbing fixture under the hand sink.
