Observation:Has shredded cheese at 44 degrees F along salad line, transferred bowl to direct contact with ice and now at 41 degrees F. Must monitor salad bars closely to ensure all PHF are kept at 41 degrees or less.

Has cloth terry mat being used as surface for sorting silverware, must separate with webbing or some other smooth, cleanable material.

Pickles in open topped container, provide a cover or lid for the container when on self serve line.
