- Utensils and pressure measuring devices maintained
Observed: One plastic spatula has been damaged and the plastic material is peeling away. All kitchen utensils must be maintained in a state of good condition to prevent contamination and bacteria build up. Discarded at the time of inspection. Corrected on site.
- Sanitizers
Observation: QA sanitizer was too strong at 400ppm concentration. Sanitizer concentration must be maintained between 200 to 400ppm (neutral). Replace more frequently. Corrected at time of inspection.
- Physical facilities maintained in good repair
Observation: Restroom door in the kitchen has light showing on the bottom around outer edges (wood part is missing). Physical facilities must be maintained in good repair to prevent entry pest or contamination form restrooms.
- Light intensity
Observation: Light bulbs are not working in both reach-in coolers in the cafeteria (South and North). The light intensity shall be in walk-in refrigeration units to allow easy cleaning and be maintained. Replace the bulbs as needed.

- Frozen PHF/TCS foods are properly slacked and thawed
Has pizza slices on rack by oven ready for baking for lunch, some getting thawed throughout. Must not pan up as early since is getting unthawed, was 65 degrees. Okay to use this AM, since has been out less than 4 hours. In process of cooking now. Monitor to enuse stays less than 41 degrees in future.
- Separation from food, equipment, utensils, linens, and single service
Has chemical storage over sink used for food prep, must relocate chemicals to prevent risk of contamination. Will correct today.

Has mixing bowls stored on cloth toweling in bakery area, must separate with webbing or other nonabsorbent material.
- When to wash
1) Observed one staff changing gloves without washing hands in between, must wash hands when changing gloves. 2) Must wash hands at kitchen hand sink even after using the RR hand sink. Both corrected on site.
