- Critical - Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Egg rolls at 75 F and fried chicken at 76 F in containers next to fryers. No time documented. Working portions of food is allowed to sit at room temperature for a maximum of 4 hours then an left overs must be discarded. The time the food was removed from refrigeration must be documented every time.
- Critical - Potentially hazardous food not held at 135 degrees Fahrenheit or above. Chicken stock in double soup urns in steam well at 120 F. The heat is blocked because food is not directly in the hot water in steam well. Water was added to second soup urn to create steam and raise temperature.
