- High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Shredded cheese, cut tomatoes, salsa, and cut lettuce all 69°-70°. Explained to operator Time as Public Health Control and gave and filled out paperwork. Operator only operating for 3 hours.
- High Priority - Potentially hazardous (time/temperature control for safety) hot held at less than 135 degrees Fahrenheit or above. Chicken and beef 128-131° in steam table closest to cook top. Had employee turn settings up.
