Permit displayed. Certified food manager (CFM) present. Active managerial control observed. Facility organized and clean. This is the first 30 day routine inspection for this facility after the pre-opening inspection. Spoke with CFM regarding the following: 1) Use of a lid and straw for use of employee drinks 2) Use of beard guard for employees with long beards 3) Have reach in freezer inspected by a professional for ice built up and defrosting issues.
Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site) Observation: Unwrapped or uncovered food in the walk in freezer and walk in refrigerator.
Correction: Protect food from cross contamination by storing food in packages, covered containers, or wrappings.
Food Storage Containers - Identified with Common Name of Food Observation: Unlabeled food containers.
Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.
Food Storage - Clean and Dry Location (corrected on site) Observation: Food stored on the floor or food stored less than 6" above the floor in the walk in units.;Elevate food storage onto approved shelving with minimum 6" legs or casters.
Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site) Observation: The ready-to-eat (RTE) commercially processed blue cheese and ranch in the sandwich reach in refrigeration unit was not properly dated for disposition after opening.
Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
Mops - Drying Mops (corrected on site) Observation: Mops not hung up to air dry.
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

Routine
This is a follow up inspection in response to a pre-opening inspection conducted on 10/01/2015. Hot water supply is adequate. Air gap for backflow prevention is corrected. Hand washing signs posted at all hand sinks. Previous violations corrected. Re-adjust restroom self closing doors. Provide paper towels at both restrooms. Provide Final Certificate of Occupancy. Health Department permit to be issued after Certificate of Occupancy is provided. No violation noted during this evaluation.
