Critical: FOOD CONTACT SURFACES - SANITIZED BEFORE USE AFTER CLEANING Observation: Utensils and equipment are not being sanitized after cleaning. (The operator stated that the commercial dishwasher needs parts.
Correction: All equipment and utensils must be manually sanitized using a three compartment sink or sanitized in the properly working commericial dishwashing machine. Operator will manually sanitize dishes using a 100 ppm chlorine bleach water solution which is about 1 teaspoon bleach per gallon of water. Correct By: 04-Nov-2014
