Observation: Corned beef cooled overnight in covered, deep, plastic container put in True T-49 reach-in cooler was not cooled properly and is at 44.1°F after more than six hours.
Correction: Adjust method or procedures to cool foods from 135°F to 70°F in the first 2-hours and from 70°F to 41°F in an additional 4-hours or if prepared or received at ambient temperatures cool to 41°F in 4-hours. Corned beef was discarded during inspection. During slow cooling, potentially hazardous foods (time/temperature control for safety foods) are subject to the growth of a variety of pathogenic microorganisms. If the food is not cooled in accordance with this Code requirement, pathogens may grow to sufficient numbers to cause foodborne illness.

Observation: The warewashing machine is not sanitizing utensils, and chlorine is below detectable levels.
Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration. Operator has filled manual sink to 200 ppm chlorine and service person is on-site replacing parts.

Observation: The consumer advisory on menu is missing asterisks next to applicable menu items offered undercooked such as eggs and hamburgers.
