    Observation: The consumer advisory on menu is missing asterisks next to applicable menu items.
    Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition which includes asterisks next to applicable menu items and the advisory so that consumers are notified of which foods may be undercooked and pose a potential health risk. Correct By: 24-Aug-2015
  • PERSONAL CLEANLINESS - JEWELRY (corrected on site)
    Observation: Employee noted wearing bracelet while working with food.
    Correction: Except for a plain ring such as a wedding band, prohibit food employees wearing jewelry on the hands or wrists while working with food. Bracelet removed during inspection.
  • WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER (corrected on site)
    Observation: Damp wiping cloth used for wiping counters stored on front service counter. There is no detectable level of sanitizer in the spray bottle or wiping cloth bucket, and the wall dispenser of Keystone quaternary ammonia sanitizer is empty.
    Correction: Cloths used for wiping counters shall be stored in a sanitizing solution. Bleach provided during inspection and spray and bucket solutions are now at 200 ppm chlorine.
  • HANDWASHING SIGNAGE
    Observation: No handwashing signage provided behind front service counter handwashing sink. Handwashing signs provided to person in charge.
    Correction: Provide handwashing signage at all handwashing sinks used by food employees. Correct By: 11-Aug-2015

    Observation: Corned beef cooled overnight in covered, deep, plastic container put in True T-49 reach-in cooler was not cooled properly and is at 44.1°F after more than six hours.
    Correction: Adjust method or procedures to cool foods from 135°F to 70°F in the first 2-hours and from 70°F to 41°F in an additional 4-hours or if prepared or received at ambient temperatures cool to 41°F in 4-hours. Corned beef was discarded during inspection. During slow cooling, potentially hazardous foods (time/temperature control for safety foods) are subject to the growth of a variety of pathogenic microorganisms. If the food is not cooled in accordance with this Code requirement, pathogens may grow to sufficient numbers to cause foodborne illness.

    Observation: Opened can of whipped dairy topping is held at room temperature.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. Can discarded during inspection.

    Observation: The warewashing machine is not sanitizing utensils, and chlorine is below detectable levels.
    Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration. Operator has filled manual sink to 200 ppm chlorine and service person is on-site replacing parts.
