Observation: Damp wiping cloth used for wiping counters stored on counter by bread buttering machine.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution.
- FOOD CONTACT SURFACES - NON TCS/PHF -IMPROPER CLEANING
Observation: Beverage dispenser drains from ice bin not contacting PHF/TCS food are improperly cleaned. Biofilm is visible in ice bin drains and waste drain.
Correction: Clean utensil and equipment not contacting PHS/TSC food any time contamination occurs, at least every 24 hours, or at a frequency according to manufacturer specifications. Correct By: 09-Apr-2014

Observation: Food establishment is operating beyond their current food permit category assignment. Complexity factors include raw animal food, seating over 50, drive-through, reheating/cooling, and preparation that includes chopping, slicing, dicing, etc.
Correction: Modify your current license and pay applicable fees to the department. All food code requirements for the new risk category shall be met before moving from one category to another. Fee difference will be reflected on 2014-2015 permit renewal. Fee difference is $210. Annual fee for a complex restaurant is $540. Correct By: 30-Jun-2014
