WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES Observation: A chlorine test kit is not available for checking sanitizer concentrations at the bar glass washer.
Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.
FOOD CONTACT SURFACES - SOILED (corrected on site) Observation: The ice machine, bar soda gun and holders are visibly soiled.
Correction: Maintain food contact surfaces in a clean condition.
EQUIPMENT AND UTENSILS - GOOD REPAIR Observation: Food processor base and ice bucket handles have been repaired with tape.
Correction: Repair equipment to good condition or remove from premise.
UTENSILS, EQUIPMENT AND LINENS - PRESET TABLEWARE Observation: The preset tableware is not properly covered to prevent contamination of food contact surface.
Correction: If preset, utensils shall be protected from contamination by being wrapped, covered or inverted. Any exposed, unused settings shall be removed when the consumer is seated or unused utensils shall be removed after the consumer is seated and be properly cleaned and sanitized.
CLEANING VENTILATION SYSTEMS, NUISANCE AND DISCHARGE PROHIBITION Observation: The fan in the downstairs walk-in cooler has excess dust accumulation.
Correction: Clean ducts or replace filters. Air ducts and filters shall be cleaned as often as necessary to prevent contamination by dust, dirt and other materials.

Critical: COOLING (corrected on site) Observation: Cranberry sauce and marinara sauce in walk in cooler and on the counter is not cooling properly and is at 106 (marinara) and 166 (cranberry)°F after 3 hours and 2 hours.
Correction: Adjust method or procedures to cool foods from 135°F to 70°F in the first 2-hours and from 70°F to 41°F in an additional 4-hours or if prepared or received at ambient temperatures cool to 41°F in 4-hours.
USING A HANDWASHING SINK - ACCESSIBLE Observation: Handwashing sink observed to be used as a towel holder for clean towels with the slicer stored in fron of the sink during inspection and is unavailable for proper handwashing.
Correction: Keep handwashing sink free of obstructions and in working condition at all times to allow for frequent handwashing.
PERSONAL CLEANLINESS - HAIR RESTRAINTS Observation: Employee noted working in food preparation/cooking area without a hair restraint.
Correction: Provide employees working in food preparation and cooking areas with effective hair restraint (hat, hair net, beard restraint, etc.).
FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR Observation: The ice wand and bread was stored on the floor in the walk in freezer.
Correction: Store all food items 6 inches above the floor.
NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY Observation: The True 1 door freezer bottom of unit is not cleaned on a frequent basis ice cream and other food products present.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.

-floor under the dishwash area
-front of the lower cabinets in the waitress station of food splatter
-floor on walk in cooler in the basement
