WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER Observation: Wiping cloth used for wiping counters stored in sanitizer at 50 ppm chlorine. The container contained soap and chlorine. Discussed using only sanitizer so that the soap does not dilute the sanitizer.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution of 100 ppm chlorine.
PROPER COOLING METHODS USED - FROZEN FOOD Observation: Frozen fries, chicken and vegetables not stored and maintained frozen. The freezer noted at 30 F. Discussed having that freezer, the salad cooler, the reach-in dressing cooler and the 4-drawer grill cooler serviced.
Correction: Adjust procedures so that food that is frozen in a freezer is maintained frozen while being stored..
LIGHT BULBS - PROTECTIVE SHIELDING Observation: Lights located above prep tables are not shatter resistant or sheilded.
Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs.
INSECTS AND RODENTS - OUTER OPENINGS - SOLID, SELF-CLOSING AND TIGHT FITTING DOORS Observation: The kitchen screen door is not self-closing or tight-fitting. Discussed using a closure that is still quick to exit the door in the case of a fire.
Correction: Make the door self-closing and tight fitting to prevent the entrance of insects or rodents.

Correction: Store in-use utensils in the food item with handle extended or on a clean surface to prevent contamination from hands.
NON-FOOD CONTACT SURFACES - CLEAN Observation: Floor under soda bag-in-a-box and ice machine noted soiled.
Flooring underneath bar noted with debris.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
