- Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site)
Observation: The quaternary sanitizer is not being used according to EPA registed label use instructions and is at 0 PPM. Automatic sanitizer is broken and not dispensing sanitizer. Employees are not testing concentration of sanitizer for warewashing or food contact surfaces and therefore it is difficult to determine how long food contact surfaces, dishes and equipment have been imporperly cleaned.
Employees are able to sanitize dishes without the automatic dispenser by manually pouring sanitizer into sanitize sink with water. Additionally, manual pouring of sanitizer and water in buckets or spray containers to sanitize food contact surfaces is required until automatic dispenser can be repaired/replaced.
Please ensure employees are properly testing concentration of sanitizer on a regular basis. Sanitizing dishes is a critical step in cleaning dishes and public/food safety. Please refer to information below. Quaternary sanitizer concentration is located on the label as per the manufacturer. For Super San, used by this Subway location, 200 ppm is what is recommended by the manufacturer.
Correction: Provide training to employees on proper use and concentration of sanitizer and repair or adjust warewashing equipment to provide proper sanitizer concentration.
- NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY
Observation: The warewashing faucets, plumbing and wall area in warewashing area are not cleaned on a frequent basis.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
- INTENSITY - LIGHTING
Observation: The light intensity in the women's bathroom is less than 20 foot candles.
Correction: Provide the correct lighting intensity in all work and storage areas.
