Correction: Train food employees in proper handwashing techniques. Be sure to use either paper towel or elbow to turn of faucet after handwashing to avoid recontamination. Discussed with employee and observed correct handwashing throughout the rest of inspection. Correct By: 26-Mar-2015

Observation: Top layer of chicken in make top cooler was approx. 47F. Chicken was stacked above cold line of pan.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Chicken was taken to reach-in cooler to chill to 41F. Verified at 33.2F at end of inspection. Correct By: 26-Mar-2015
- Critical: TOXIC SUBSTANCES - CONDITIONS OF USE - USED (corrected on site)
Observation: Sticky fly trap was observed over prep table in kitchen. These are not approved forms of pest control for kitchen use.
Correction: Change procedures and provide training to employees on proper use of toxic chemical following manufacturer's directions for use. Removed fly trap. Correct By: 26-Mar-2015

Observation: Spray bottle of bleach water was over 200ppm as measured on test strip. It bleached out test strip.
Correction: Sanitizer shall meet the requirements under 40 CFR 180.940. Follow directions for use on manufacturers label. Chlorine sanitizer should be between 50-100ppm. Employee emptied bottle. Discussed with staff. Correct By: 26-Mar-2015

Observation: Bag of onions was stored on floor under food preparation sink.
Correction: Store all food items 6 inches above the floor. Correct By: 27-Mar-2015
