Observation: Hot water temperature at automatic handwashing sink behind the register is at 78.8°F.
Correction: Water temperature at a handwashing sink shall be at least 85°F and no more than 110°F. Adjust the water temperature of this handwashing sink. Correct By: 18-Feb-2016
- WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER
Observation: Wiping cloths used for wiping counters and the white sandwich preparation boards on the prep line are stored in a bucket of warm soapy water.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution. If facility wishes to wash counters with soapy water before sanitizing, fill a separate container with soapy water and store wiping cloths in the container with sanitizer solution. Correct By: 11-Feb-2016
- THERMOMETERS - FUNCTIONALITY - WARMEST PART OF UNIT
Observation: The thermometer located on the outside of the walk-in cooler is not accurate.
There is no thermometer in the walk-in freezer.
The thermometer is missing from the Duke 2 door reach-in cooler.
Correction: Obtain an accurate thermometer for the walk-in cooler and position it in the warmest part of the refrigeration unit (in the front near the door).
Manager stated a thermometer for the walk-in freezer has been ordered. Position this thermometer in the warmest part of the freezer unit.
Obtain a thermometer for the Duke 2 door reach-in cooler. Correct By: 03-Mar-2016

Observation: A wire shelving unit currently used to hold employee drinks is located on the wall directly above the food preparation sink.
Correction: Relocate the shelving unit that is used to hold employees drinks to an area that will not potentially contaminate food, equipment, linens, single-use and single service articles. Correct By: 11-Feb-2016

Observation: The plumbing system is not properly designed, constructed or installed. Ice machine drain pipe discharges into receptacle via air break and has large mold growth connecting both discharge and receptacle.
