WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER Observation: Wiping cloths used for wiping counters and the white sandwich preparation boards on the prep line are stored in a bucket of warm soapy water.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution. If facility wishes to wash counters with soapy water before sanitizing, fill a separate container with soapy water and store wiping cloths in the container with sanitizer solution. Correct By: 11-Feb-2016
THERMOMETERS - FUNCTIONALITY - WARMEST PART OF UNIT Observation: The thermometer located on the outside of the walk-in cooler is not accurate.
There is no thermometer in the walk-in freezer.
The thermometer is missing from the Duke 2 door reach-in cooler.
Correction: Obtain an accurate thermometer for the walk-in cooler and position it in the warmest part of the refrigeration unit (in the front near the door).
Manager stated a thermometer for the walk-in freezer has been ordered. Position this thermometer in the warmest part of the freezer unit.
