    Observation: Food employees observed improperly washing hands by recontaminating hands on faucet controls when turning off faucet.
    Correction: Train food employees in proper handwashing techniques. Use forearms or paper towel as a barrier to turn off faucet without recontaminating hands. Correct By: 21-Sep-2015
  • Critical: WHEN TO WASH
    Observation: Employee observed not washing hands after handling utensil from student that had fallen on the floor and before handling a clean lunch tray.
    Correction: Before working with food, clean equipment, utensils, and single-use or single service articles food employees shall properly wash their hands. Recommended providing a separate containers for students to deposit utensils that fall onto the floor and become contaminated. Correct By: 18-Sep-2015
  • Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS (corrected on site)
    Observation: There are ready-to-eat salad dressings and other ready-to-eat food stored under raw shell eggs in the Sub-Zero reach-in cooler.
    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination. Eggs moved to bottom shelf.

    Observation: Cottage cheese is cold held at 46.4°F. The cottage cheese is in the steam table well, with the heating element turned off, but next to a well of hot carrots with the heating element turned on.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. Operator turned pan 90 degrees, set it back in well further from the hot carrots, and returned it to the walk-in cooler between school lunch periods. Remainder of cottage cheese discarded.
  • FOOD CONTACT SURFACES - SOILED
    Observation: There is mold on a plastic container of flour and bags of flour in the walk-in cooler.
    Correction: Maintain food contact surfaces in a clean condition. Discard food which may be unsafe or contaminated with mold. Correct By: 19-Sep-2015
  • PERSONAL CLEANLINESS - JEWELRY (corrected on site)
    Observation: Employee noted wearing wristwatch while working with food.
    Correction: Except for a plain ring such as a wedding band, prohibit food employees wearing jewelry on the hands or wrists while working with food. Employee removed wristwatch during inspection.
  • NON-FOOD CONTACT SURFACES - CLEAN
    Observation: Non-food contact surfaces of walk-in cooler door seals have visible mold on them. The rack for sheet pans has visible mold on it. Other rack shelving have food residue on them.
    Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment. Correct By: 25-Sep-2015

  • WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER
    Observation: A damp wiping cloth used for wiping counters is stored on the prep table by the food prep sink. Another wiping cloth is in a solution of 100 ppm or less of quaternary ammonia which is less than what is required by state code and the manufacturer's label.
    Correction: Cloths used for wiping counters shall be stored in a sanitizing solution. Correct By: 07-Nov-2014

    Observation: The bag of ice is stored on the floor in the walk-in freezer.

    Observation: Dish machine racks are stored on the floor by the dish machine. Oven racks are stored on the floor between the Sub-Zero cooler and the wall. Ice-board inserts for the milk barrel are stored on the floor in the walk-in cooler.
    Correction: Clean equipment and utensils, laundered linens, single-use and single service articles shall be stored in a clean dry location, not exposed to contamination and off the floor. Correct By: 07-Nov-2014
