Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS (corrected on site) Observation: There were raw eggs and pans of raw cod stored over ready-to-eat lemons and beverages in the walk-in cooler.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination. Items were rearranged during inspection.
WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES (repeated violation) Observation: A chlorine test kit is not available for checking sanitizer concentrations.
Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.
FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR (corrected on site) Observation: An open bag of popcorn was stored on the floor in the dried foods storage area.
Correction: Store all food items 6 inches above the floor. The popcorn bag was closed and relocated during inspection.
THAWING (corrected on site) Observation: Frozen cod was being improperly thawed on a rack in the kitchen.
Correction: Adjust procedures or methods to properly thaw foods. Cod was moved to the walk-in during inspection.
WAREWASHING - RINSING PROCEDURES (corrected on site) Observation: Food employee stated dishes were washed then rinsed, without being sanitized.
Correction: Equipment and utensils shall be WASHED- RINSED- then SANITIZED. Provided training to all employees for proper warewashing.
HANDWASHING SINKS, INSTALLATION - NON-HAND OPERATED (repeated violation) Observation: Handwashing sink in the women's restroom is not non-hand operated or is operating incorrectly. The water flow does not last at least 15 seconds at the push handle faucet.
Correction: Employee handwashing sinks shall be non hand operated and if metered shall provide a flow of water without the need for reactiviation for at least 15 seconds.

Correction: Adjust exposure time to hot water sanitization rinse so utensils reach a minimum surface temperature of 160°F.
