Observation: In the walk in cooler, farm eggs are stored with food supply for the restaurant, including eggs. In upright freezer, wild game is stored (walleye). Owners states both items are for personal use only.
Jams and salsa made on side are canned and offered for sale to the public.
Correction: All these food items are from unapproved source. Remove items from restaurant and store at home. (Owners home is located on the same property.) Correct By: 17-Feb-2015

Observation: In the walk in cooler, prepared chili is dated 2/8 (9 days old), beef noodle soup is dated 2/5 (12 days old).Food items have exceeded 7 days holding time.
Correction: Discard Ready-to-eat potentially hazardous (TCS) foods requiring date marking that have exceeded their discard date or are not date marked. Correct By: 17-Feb-2015
- SURFACE CHARACTERISTICS - INDOOR AREAS
Observation: Piece of wood below the broaster is unsealed wood and is soiled from the fryer oil. Surface is not easily cleanable or non absorbant.
Correction: Replace the board or repair it with approved materials. Walls, floors and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent. Correct By: 01-May-2015

- Critical: PROPER DISPOSITION OF FOOD - RETURNED AND RESERVICE
Observation: Jars of jams and jellys are placed on tables and customers scoop out desired amount of food. The jars are then placed onto the next customers tables for their use. Jars are not single use containers of food.
Correction: Discontinue placing jars of jams and jellys on patrons table for multiple customers use. Food is not to be reserved, discard food after it was returned from service. Food can only be offered for consumption after it is returned if its packaging is still intact or the dispensing container prevented contamination (such as a squeeze bottle of dressing or ketchup). Use single portion cups for jams or dispensing style bottles. Correct By: 31-Jan-2014
- TOXIC SUBSTANCES - SANITIZER CRITERIA (corrected on site)
Observation: Spray bottle of sanitizer was at 200+ ppm chlorine.
Correction: Remix sanitizer and maintain at 100 ppm chlorine. Use 1/4 tsp of bleach to 1 quart of water. Correct By: 31-Jan-2014
- IN-USE UTENSILS, BETWEEN USE STORAGE
Observation: Scoops stored in large containers of flour, breading, and powdered soup base do not have handles, and are in direct contact with food.
Correction: Replace cups used for dispensing flour, breading, etc., which are stored in the container, with a scoop that has a handle. Store in-use utensils in the food item with handle extended. Correct By: 07-Feb-2014
