Observation: Food is obtained from an unapproved source, noted during inspection a jar with pickled onions in the walk-in cooler without a label. Possibly home canned. Item was discarded at time of inspection.
Correction: Discard foods from unapproved source.

Observation: There are ready-to-eat food stored under raw hamburger in the upright kitchen cooler and the walk-in cooler on a cart. Make sure all raw meats are on the very bottom shelf of cooler regarless of being inside a closed container.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
- WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES
Observation: A chlorine test kit ws present but not working properly for checking sanitizer concentrations. Noted cap of test strips was missing indicating that may have caused the strips to no longer work. Test strips were ordered at time of the inspection.
Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.
- PERSONAL CLEANLINESS - HAIR RESTRAINTS
Observation: Employee noted working in food preparation/cooking area without a hair restraint.
Correction: Provide employees working in food preparation and cooking areas with effective hair restraint (hat, hair net, beard restraint, etc.).
- IN-USE UTENSILS, BETWEEN USE STORAGE
Observation: Ice scoop in bar ice bin was improperly stored by having the handle directly on the ice which is consitdered a food item.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
