Observation: There is ready-to-eat food (butter) stored under raw hamburger in 2-door prep top cooler.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.

Observation: Chlorine concentration in wiping cloth bucket found to be 200 ppm. Chlorox bleach is not being used according to manufacturer’s use directions for sanitizing food contact surfaces.
Correction: Maintain chlorine concentration in wiping cloth buckets 100 ppm.
- THERMOMETERS - AMBIENT AIR AND WATER - ACCURACY
Observation: Thermometer in 2-door prep top cooler by range measuring ambient air is not accurate to ± 3°F.
Correction: Calibrate or replace thermometer.
- FOOD TEMPERATURE MEASURING DEVICES - SMALL DIAMETER PROBE
Observation: No thermometer is present for monitoring temperatures in thin mass foods.
Correction: Provide a thermometer capable of taking temperatures in thin mass food items.
- FOOD CONTAMINATION PREVENTED - MISCELLANEOUS CONTAMINATION
Observation: Ice in storage bins at bar is subject to potential contamination. Drain tubes extend into contaminated large PVC drain pipes in floor area below ice bin.
Correction: Cut off drain tubes that extend into PVC pipes and provide 1" air gap. One drain tube was corrected during the inspection. Cut other drain tube.
