Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS (corrected on site) Observation: There are ready-to-eat bread stored under 2 door cooks reach-in stored under raw hamburger patties. Cook was abkle to rearrange cooler.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
Critical: RTE/PHF-TCS PROPER DATE MARKING (corrected on site) (repeated violation) Observation: Milk, chilli, pickled eggs and various other items not sure what they are in walk-in cooler are not date marked. Cook was able to label all procducts in walk-in cooler day of inspection.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
PERSON IN CHARGE - DUTIES Observation: The Person in Charge (PIC) is not performing the following duties: monitoring and training of handwashing, label and date of all items and dishwasher sanitizer being changed and monitored.
Correction: The person in charge shall provide training to employees on keeping the handwash sink free of debris and use it to wash hands
CONSUMER ADVISORY Observation: Consumer advisory provided on menu needs asterisk by each item able to be served under well done.
Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition.
WAREWASHING - CHEMICAL SANITIZER CONCENTRATION (corrected on site) Observation: No sanitizer was provided during inspection for the dishwasher. Cook was able to change sanitizer jugs and prime to provide sanitizer. No snitizer was provided with this fix. The 3 comparment sinks will be used until fixed. Discussed sanitizer concentration. Bromack saleman coming today. He is who they purchased the dishwasher from so hopes he will be able to fix it.
Correction: Provide an operable dishwasher.
