    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.

    Observation: PHF in the 2 door beverage air was holding at 55°F.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. Manager disclosed that he put 4 large pans of beef/ham with Hot AuJus into the cooler at 2PM. All pans of beef/ham were moved to the stove to cook to 165 then hot hold till service tonight. Noodle salads were repacked in shallow stainless steel pans and moved to the walk in cooler.

    Observation: Cheese in Beverage Air cooler is cold held at 44°F. Observed ice build up near condenser.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. Cheese was voluntarily discarded. There are no other potentially hazardous foods stored in this cooler at time of inspection. Do not store potentially hazardous foods in this cooler until temps of 41 degrees or below are maintained. Operator will call for service.
