    -Inside of ice machine-remove panel and clean behind it
    -Equipment wheels
    -Underneath all shelving units
    -Barista bar floor drain
    -Food prep sink floor drain
    -Inside of ice bin at barista bar
    -Soda machine nozzles and around nozzles
    Correction: Maintain food contact surfaces in a clean condition.
  • EQUIPMENT AND UTENSILS - WOOD, USE LIMITATION
    Observation: Wicker baskets are being used as a food contact surface to hold bread.
    Correction: Remove wood used for food contact surfaces unless otherwise approved for use.
  • EQUIPMENT AND UTENSILS - CUTTING SURFACES
    Observation: Butcher block and cutting boards throughout establishment are heavily scored and discolored.
    Correction: Resurface or discard cutting boards or blocks with excessive scratching or scoring.

    -Clean the floor drain under Barista area and prep sink
    Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
  • LIGHT BULBS - PROTECTIVE SHIELDING
    Observation: Lights located in dry stoorage area are not shatter resistant. Cover observed missing and shal lbe replaced.
    Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs.
