    Observation: Raw chicken was cooked to a temperature of 152°F.
    Discussed using a calibrated thermometer to verify the cook temperature of foods instead of using the appearance of the food. Demonstrated how to properly calibrate food thermometer. Recommend calibration once a week or if dropped. The chicken was placed back on the grill to continue cooking until 165 F.

    Correction: Cook potentially hazardous raw animal foods to the appropriate time and temperature. Adjust procedures and methods.
  • WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES
    Observation: A chlorine test kit is not available for checking sanitizer concentrations.
    Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.
  • FOOD CONTACT SURFACES - SOILED
    Observation: Soda gun nozzles at the main bar and banquet bar is visibly soiled.
    The discharge hose to the ice machine is visibly soiled and is leaking on the floor.

    Correction: Maintain food contact surfaces in a clean condition.
    Provide a longer discharge hose that can reach to the floor drain.

    Observation: There is no State of Wisconsin food manager’s certificate posted in the food establishment.
    Correction: Provide & post an original State of Wisconsin food manager's certificate.

    Observation: The floor of the walk-in cooler is in disrepair. The floor shall be replaced within 6 months. This is a repeat violation since 2012.
    Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable.

    Observation: There is no State of Wisconsin food manager’s certificate posted in the food establishment. There is a certified person, but the documentation was not sent to the State. An application was provided during inspection today.
    Correction: Provide & post an original State of Wisconsin food manager's certificate.
  • FLOORS, WALLS AND CEILINGS - CLEANABILITY
    Observation: The floor in the walk-in cooler is buckled and has disintegrated in areas to the point that it is no longer easily cleanable. The owner stated today that he will be replacing it over the summer when they can close for a day. He is currently looking into different options.
    Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable.
  • POSTING OF PERMIT
    Observation: Current Waukesha County permit is not posted in establishment. The owner will be contacting our department to get a duplicate license to operate.
    Correction: Post permit in public view.

    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination. Correct By: 15-Jan-2014

    Observation: Drinking ice bin observed with a drinking bottle nested inside of it.
