Observation: No iodine was measured in the final rinse of the glasswasher.
Correction: Repair the machine as needed to provide at least 12.5 ppm iodine in the final rinse. Until effective repairs can be made, all bar glasses will be sanitized using the kitchen utensil sinks.

Observation: Sanitization rinse in high-temperature dishmachine does not register on the irreversable temperature indicator. The machine rinse temperature indicates water temp as high as 174F.
Correction: Adjust exposure time to hot water sanitization rinse so utensils reach a minimum surface temperature of 160°F. Until effective repairs can be made, all utensils will be sanitized using the 3-compartment sinks.
- FOOD CONTAMINATION - FOOD STORAGE PROHIBITED AREAS (repeated violation)
Observation: The basement ice machine is located under a sewer pipe.
Correction: Remove food items from this area to an area not subject to contamination.
- EQUIPMENT AND UTENSILS - NONFOOD CONTACT SURFACES - CONSTRUCTED
Observation: The replacement handles on the cooks cooler have rough cut edges.
Correction: Provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent and smooth materials. Smooth the edges as needed.
- NON-FOOD CONTACT SURFACES - CLEAN
Observation: Shelves in the kitchen food and utensil storage cabinets have accumulated debris on them.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
