Critical: COMPLIANCE WITH FOOD LAW - UNAPPROVED SOURCE Observation: Breads are obtained from a private individual at a farmer's market which may be an unapproved source.
Correction: Provide verification that this source is prperly licensed or discontinue use of this product.
Critical: PREVENTING CONTAMINATION FROM HANDS - NO BARE HAND CONTACT WITH RTE-FOODS (corrected on site) Observation: Employee observed handling a cooked hamburger and bun with bare hands.
Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods. Employee started using tongs and tissue paper.
Critical: PHF/TCS, COLD HOLDING (corrected on site) Observation: Several food items in the prep cooler were cold held at unsafe temperatures. See the chart above for details. Some items are stored directly on the floor of the cooler.
Correction: Maintain cold potentially hazardous foods at or below 41°F. The cooler thermostat was adjusted. A wire rack on the cooler may help with air circulation and cooling. The wrapped cheese on the prep table may need to be stored in the cooler cabinet.
Critical: SEWAGE - BACKFLOW PREVENTION Observation: An air break exists between the sewage system and a drain from the ice machine
Correction: Provide a proper 1" air gap on the drain.
Critical: TOXIC SUBSTANCES - CONDITIONS OF USE - USED (corrected on site) Observation: Chlorox bleach presently used for sanitizing wiping cloths is not being used according to manufacturer’s use directions. The label states that it is not intended for sanitizing.
Correction: Discontinue use of this product for sanitizing. The wiping cloth was switched to the quat sanitizer used for utensil sanitizing during the inspection.
USING A HANDWASHING SINK - ACCESSIBLE Observation: The food prep sink is being used for handwashing.
Correction: Discontinue use of the food prep sink for handwashing. Use the designated hand sink.
PERSONAL CLEANLINESS - HAIR RESTRAINTS Observation: Employee noted working in food preparation/cooking area without a hair restraint.
Correction: Provide employees working in food preparation and cooking areas with effective hair restraint (hat, hair net, etc.).
EQUIPMENT AND UTENSILS CONFORM TO ANSI STANDARDS Observation: The Nesco slow cookers used to reheat beans and taco meat are not ANSI certified or approved by the department.
Correction: Unapproved equipment shall be removed from food service.
