Observation: No date marking system is in place at facility. Cooked chicken, potatoes, lunch meat and other foods found without date mark. Employee stated she is only one who preps and knows when to discard food (when it has been 7 days).
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. All items were date marked appropriately. Sticker system of identifying foods with 7 days was discussed and will be utilized. Correct By: 28-Apr-2015
