HAND DRYING PROVISION Observation: No single-use toweling or other hand drying device available at handwashing sink for hand drying.
Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing.
PROHIBITING ANIMALS Observation: A dog was observed in the bar/dining area and walked thru the kitchen to be put away.
Correction: Remove the animal from the premises and keep all prohibited animals out of the premises.
THAWING Observation: Fish is being improperly thawed by placed int he rinse tank filled with water and fish being placed int he wash tank without water.
Correction: Adjust procedures or methods to properly thaw foods.
FOOD PREPARATION SINK Observation: Significant food preparation is occurring without the use of a food preparation sink. A separate food prep sink will need to be isntalled or discontinue making prodcuts from scratch that require a food prep sink.
Correction: A food preparation sink shall be provided for significant food preparation or in instances where food preparation is occurring below the flood level rim of a sink compartment such as thawing or vegetable washing.
