    Observation: Various items in the walk-in cooler, cooks reach-in and freezer are not date marked. Owner was abel tocorrect on site.
    Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
  • CONSUMER ADVISORY (repeated violation)
    Observation: No consumer advisory provided on menu.
    Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition. Asterisk all items that can be served under well done. Have the asterisk match the designation for the consuner advisory. Provide a remonder and a disclosure from the text below for the advisory.
  • HAND DRYING PROVISION
    Observation: No single-use toweling or other hand drying device available at handwashing sink for hand drying.
    Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing.
  • PROHIBITING ANIMALS
    Observation: A dog was observed in the bar/dining area and walked thru the kitchen to be put away.
    Correction: Remove the animal from the premises and keep all prohibited animals out of the premises.
  • THAWING
    Observation: Fish is being improperly thawed by placed int he rinse tank filled with water and fish being placed int he wash tank without water.
    Correction: Adjust procedures or methods to properly thaw foods.
  • FOOD PREPARATION SINK
    Observation: Significant food preparation is occurring without the use of a food preparation sink. A separate food prep sink will need to be isntalled or discontinue making prodcuts from scratch that require a food prep sink.
    Correction: A food preparation sink shall be provided for significant food preparation or in instances where food preparation is occurring below the flood level rim of a sink compartment such as thawing or vegetable washing.

    Observation: No handwashing signage provided at kitchen or rest room handwashing sinks. Provided on site.
    Correction: Provide handwashing signage at all handwashing sinks used by food employees.
