Observation: Employee observed handling cooked pasta with bare hands.
Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.

Observation: There is ready-to-eat chicken, cheeses, and/or pre-cooked meatballs stored under or adjacent to raw chicken, tuna and/or raw eggs in reach-in and/or make table coolers. Raw items were moved or separated from RTE foods during inspection.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.

Observation: Spinach, lasagna and cut tomato's were not observed to have date marks. According to Eric, these items were prepared on Saturday.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
- Critical: PLUMBING - BACKFLOW PREVENTION - AIR GAP
Observation: No air gap provided on ice bin.
Correction: Provide an air gap on water supply side to protect water supply.
- THERMOMETERS - FOOD - ACCURACY
Observation: Thermometer used in food establishment waitress cooler is broken.
Correction: Replace thermometer.
- FOOD CONTACT SURFACES - SOILED
Observation: Can opener is visibly soiled.
Correction: Maintain food contact surfaces in a clean condition.
- IN-USE UTENSILS, BETWEEN USE STORAGE
Observation: Clean knives are improperly stored cloth toweling. Cloth toweling not easily cleanable.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
- THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE
Observation: NSFreach-in cooler is not equipped with an integral or permanently affixed temperature measuring device.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.
- TOILET FACILITIES - RECEPTACLES - COVERED
Observation: Female bathroom is not provided with a covered waste receptacle.
Correction: Provide a covered waste receptacle in female bathroom for use with sanitary napkins.
- SURFACE CHARACTERISTICS - INDOOR AREAS
Observation: Flooring and walls in the kitchen and warewashing areas are in need of repair (numerous holes and cracking). These areas are no longer easily cleanable.
Correction: Repair area or replace with approved materials. Walls, floors and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent.
- LIGHT BULBS - PROTECTIVE SHIELDING
Observation: Light located above prep area across from warewashing is not shatter resistant and does not have protective shielding.
Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs.
