Correction: Provide equipment that is designed and constructed to be easily cleanable and free from unnecessary ledges, projections and crevices.
EQUIPMENT AND UTENSILS - GOOD REPAIR Observation: The ice cream chest freezer is not maintained in good repair, it needs to be defrosted and the gasket needs to be repaced. The GE cooler is not maintaining proper cold holding temperatures.
