Observation: Flan in the server cooler and containers of shredded beef in the 3 door cooler are not date marked.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
- Critical: EQUIPMENT AND UTENSILS - MATERIAL FOR CONSTRUCTION AND REPAIR - UNSAFE (repeated violation)
Observation: Unapproved Menard's buckets are being used for food storage.
Correction: Discard unsafe equipment and utensils and replace with food grade containers.
- HAND DRYING PROVISION
Observation: No single-use toweling or other hand drying device available at handwashing sink for hand drying.
Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing.
- PACKAGED AND UNPACKAGED FOOD - COVERED CONTAINERS OR WRAPPING
Observation: Raw beef in the walk in cooler and numerous containers of food in the 3 door cooler were observed to be unwrapped or uncovered.
Correction: All foods that are not part of a cooling process shall be covered at all times to prevent cross-contamination. If cross-contamination is evident, discard suspected foods.
- WAREWASHING MACHINES - LOADING OF SOILED ITEMS
Observation: Equipment is being used that is too big to be washed in the washer. There was a large uncovered container of raw ground beef in the walkin cooler that will not fit in the dishwasher.
Correction: Utensils placed in racks and basket prior to warewashing shall be arranged so that items are are exposed to unobstructed spray from all cycles and positions so they are allowed to drain.
- CLEANING, FREQUENCY AND RESTRICTIONS
Observation: There is a large accumulation of dirty dishes on the floor of the warewash area.
Correction: Clean the physical facilities at a frequency necessary to keep them clean.
