    Observation: Individual cheesecake that appears to have been bitten into was found in the shallow metal pan of individual cheesecakes for service (located in dessert cooler).
    Correction: Food is not to be reserved, discard food after it was returned from service or partially eaten. Food can only be offered for consumption after it is returned if its packaging is still intact or the dispensing container prevented contamination. Operator removed the cheesecake from the pan and discarded it. Correct By: 26-Aug-2015
  • Critical: PHF/TCS, COLD HOLDING (corrected on site) (repeated violation)
    Observation: Sliced tomatoes in True reach-in prep cooler (sauce and salads) is cold held at 49.6°F. Pico de Gallo in the True reach-in prep cooler (sauce and salads) is cold held at 48.0°F. Crab dip in the True 2 door cookline reach-in prep (sandwich) cooler has been overfilled. The crab dip overflowing off the top of the container is cold held at 45.0 °F.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. All potentially hazardous food items in the True reach-in prep cooler (sauces and salads) were discarded and unit temperature was adjusted. Do not fill the crab dip so high, the dip stored above the rim of the food container/cooler will not be able to hold proper temperature.
  • Critical: RTE/PHF-TCS PROPER DATE MARKING
    Observation: Coconut rice in the walk-in cooler has a date mark of 8/16/2015. Spanish rice in the walk-in cooler (cooked yesterday morning) is not date marked. Ribs pulled out of freezer that have thawed are not date marked.
    Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. Operator will verify with prep worked when coconut rice was made (operator stated she made pans of coconut rice yesterday). If coconut rice was made on 8/16/2015 it must be discarded.     Observation: An iodine test kit is not available for checking sanitizer concentrations of the dish machine in the bar area.

    Observation: The True 2 door prep reach-in sauces/salad cooler is not maintaining temperature. The 4 door reach-in fajita cooler is not maintaining proper temperature.
    Correction: Repair equipment to good condition or remove from premise. Do not store potentially hazardous food items in either cooler until they are able to hold proper temperature. Cooler temperature was adjusted by operator during the inspection and are now down in temperature. Correct By: 02-Sep-2015

    Observation: Back-up ice machine has accumulations of black growth on the inner drop plate and inner stainless steel walls of unit.

    Observation: The painted cement bricks behind the warewashing pre-wash sink near the dish machine in the kitchen are dirty and the paint has worn off in large areas. The areas where the paint has worn off are no longer easily cleanable and non-absorbent.
