Observation: Lemon slicer noted in need of cleaning.
Correction: Maintain food contact surfaces in a clean condition.
- IN-USE UTENSILS, BETWEEN USE STORAGE
Observation: Bean scoop was stored in water that was 118°F. Ice scoop at bar was stored in ice bin with handle touching ice. Several bulk ingredient scoops were stored inside of bins with handles touching food.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
- FLOORS, WALLS AND CEILINGS - CLEANABILITY
Observation: The floor near the steamers is missing grout between the tiles. Food and water build-up noted in space between tiles.
Correction: Re-grout floor tiles near steamers. Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable.

- Critical: PHF/TCS, COLD HOLDING
Observation: #1 Observed middles prep cooler on grill line with an ambient air temperature of 57F. Diced tomatoes measured 48F, Cheese measured 49F and Sour Cream measured 47F. Cooler Repair company was called to service cooler. #2 Observed righ prep cooler on grill line iwth ambient air temperature of 53F. Cheese measured at 44F. Cooler repair company was called to service cooler.
Correction: Maintain cold potentially hazardous foods at or below 41°F
- OPEN DRINK CONTAINER
Observation: Drinking cup without cover was observed in food preparation area (wait staff area). Alll beverage containers shall be covered and have straw. Also, all employee drink cups shall be stored in a designated area where drinks can not contaminate food or food contact surfaces.
Correction: Provide approved beverage container in food preparation area.
- EQUIPMENT AND UTENSILS - CUTTING SURFACES
Observation: Replace or resurface cutting boards on right prep cooler on grill line and on condiments cooler in wait staff area.
Correction: Resurface or discard cutting boards or blocks with excessive scratching or scoring.
- NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY
Observation: Observed floors under grill line equipment soiled. Clean floors under grill line equipment more often.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
- SURFACE CHARACTERISTICS - INDOOR AREAS
Observation: Observed grout missing on floor tiles on back cook line, grill line and dish washing area. Grout shall be replaced between tiles to ensure floor is smooth, durable and easily cleanable.
Correction: Repair area or replace with approved materials. Walls, floors and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent.
