Observation: Employee observed not washing hands after cracking shelled eggs. Employee was observed wearing two gloves, when cracking eggs - would remove the outer glove only and then don a new glove. Notified management - who immedietely communicated with employee. Retrain all employees to wash hands after cracking shelled eggs, prior to wearing gloves.
Correction: Before working with food, clean equipment, utensils, and single-use or single service articles food employees shall properly wash their hands. Correct By: 05-Feb-2016
- Critical: PHF/TCS, COLD HOLDING (corrected on site)
Observation: Sour cream, fruit salad, cut melon in the waitress prep cooler is cold held at 43-46°F. All items were date marked 1-28-16. Ambient temperatures on the bottom right shelf of the unit was at 39F. According to the operator, the left side door was replaced but the latching mechanism still needs adjustments. Operator has called and will have someone to repair the door. In the meantime, suggested to operator to have the door taped shut or propped closed. Operator has discarded all PHF/TCS foods made from yesterday. New batches of PHF/TCS foods will be prepared and stored on the bottom right of the cooler. Periodically check all food temperatures to ensure that potentially hazardous foods are kept at or below 41F.

Observation: The sanitizer for the dish machine is not being used according to EPA registered label use instructions and is at 10 PPM. Have the machine repaired and serviced to dispense the correct concentration. In the meantime, the wash cycle on the machine can be utilized, once cleaned, sanitizer all dishes in the 3 compartment sink. The sink was set up and proper concentration of 50 PPM was observed. Continue to utilize the sink for all ware-washing only, until machine is repaired to dispense the correct sanitation level.

- PLUMBING - SYSTEM MAINTAINED IN GOOD REPAIR
Observation: The cookline hand washing sink is not maintained in good repair. Water is leaking from the gasket and will need to be repaired. Bucket was placed temporarily underneath the sink to catch water. Have the sink repaired and maintained.
Correction: The plumbing system shall be maintained in good repair. Repair or replace defective or leaking plumbing. Correct By: 26-Feb-2016
